Our story
We've been friends since we can remember, and the only thing harder than putting up with each other has been putting up with Irish "Mexican food" (generally Tex-Mex slung out of a petrol station).
We decided it was time to take matters into our own hands – we quit our jobs to start a food truck!
It's vital to us that we represent Mexican cuisine as best we can, so we travelled there to experience it first-hand.
It was tough work – taking cooking classes and filling ourselves to the brim with tacos and beer – but we powered through, for the people of Ireland ☘️

Our vision for the truck was moulded – combining genuine Mexican recipes with world-class Irish produce, all with the friendly, welcoming atmosphere of both Irish and Mexican cultures.
When we hiked to the top of an active volcano in Guatemala, we had no choice but to name our venture after it. El Fuego was born 🔥
